Here are a few good fares available at the moment to destinations in North America and Europe. As you know, some fares seem to stick around quite a while and others are gone in an instant. These are sample fares found this afternoon. Some of these airfares are widely available on various dates while others are quite limited.

Fredericton – London ($537) Oct. 10-17 WestJet
Of course, you can always play around with the flight search to find a good open-jaw price. For example:
Halifax – Manchester Sept. 15, Paris – Halifax Sept. 29 ($571) Icelandair (Divide the trip between Yorkshire, London and Paris)
Halifax – Munich Sept. 2, Vienna – Halifax Sept. 20 ($660) Condor (Check out Bavaria, Salzburg and Vienna)
And remember in addition to the excellent rail service in Europe, there is also the option of hopping a budget airline to get to your next destination.

I like these types of posts. Perhaps at some point you could explore the “booking well in advance vs last minute” pros and cons.
In this post, you mention the excellent trains available in Europe. While I agree (and would often choose the train over the regional airline carriers), it is important to note that prices can greatly vary depending on when those train tickets are bought. You can save € if you plan ahead.
